The Flat Bed
Codex uses a flat filter rather than a cone. That creates an even bed of grounds, so water contacts every particle for roughly the same amount of time — the thing conical drippers struggle with.
Why That Matters
Even Extraction
No channels, no over-extracted edges and under-extracted centre. Every part of the bed gets the same treatment.
Repeatability
Once you find a recipe that works, the flat bed makes it far easier to hit the same result tomorrow.
Clarity
Paper filtration through an even bed produces a clean cup where origin character comes through — fruit acidity in African coffees, caramel sweetness in Central American.
Water in Kuwait
Hard water changes how coffee tastes. Use filtered or light mineral water, kept between 93 and 96°C.
A Recipe to Start From
- 22g ground coffee, medium grind
- 350ml water at 93–96°C
- Ratio 1:16
- Rinse the filter with hot water
- Add coffee and level the bed gently
- Bloom with double the coffee weight in water, 30 seconds
- Pour the remainder in two or three stages
- Total time: 3–4 minutes
Dialling It In
- Sour: grind finer, or raise water temperature
- Bitter: grind coarser, or lower temperature
- Draining too fast: grind finer
- Stalling: grind coarser
