Beyond Washed and Natural
For most of coffee's history there were two ways to process a cherry: wash the fruit off, or dry it on. In the last decade, producers have started borrowing techniques from winemaking and food science — and the results have divided the specialty world.
Anaerobic Fermentation
Cherries are sealed in tanks with the oxygen removed. Without air, a different set of microbes takes over fermentation, producing flavour compounds that conventional processing never generates.
What it produces: intensity. Wine-like notes, tropical fruit, sometimes a fermented character that reads as boozy. The effect is unmistakable and not subtle.
The risk: timing is everything. A few hours too long in the tank and the coffee crosses from expressive into defective.
Carbonic Maceration
Borrowed directly from Beaujolais winemaking. Whole cherries ferment in a CO₂-saturated tank, where fermentation happens inside the intact fruit rather than around it.
What it produces: pronounced fruit sweetness with a distinctive aromatic lift.
Freeze-Assisted Processing
Cherries are frozen at some point in the process. Ice crystals rupture the cell walls of the fruit, which lets sugars and aromatic compounds move into the bean more readily during subsequent drying.
What it produces: concentrated fruit character with unusual clarity — the fruit notes read as cleaner and more defined than in a standard natural.
Yeast and Culture Inoculation
Specific yeast strains are introduced to the fermentation, the way a brewer or winemaker selects a strain. This gives producers control over which flavour compounds develop rather than leaving it to whatever microbes happen to be present.
The Debate
Traditionalists argue these methods bury terroir — that a heavily processed coffee tastes of the process, not the farm. You could grow the same lot at a different altitude and the anaerobic character would still dominate.
Advocates argue this is simply the next stage of craft, and that no one accuses winemakers of cheating for controlling fermentation.
Both positions have merit. What's certain is that experimental processing produces coffee that tastes genuinely unlike anything traditional methods yield.
Brewing Experimental Coffees
These coffees carry more soluble material and more volatile aromatics than conventional lots:
- Grind slightly coarser than usual — over-extraction turns the fermented character harsh
- Use slightly cooler water, around 90–93°C
- Filter methods show the aromatics better than espresso
- Give them extra resting time — often three to four weeks off roast
Worth Trying?
If your palate is calibrated to conventional coffee, an anaerobic lot will genuinely surprise you. Whether that surprise is welcome is personal — but it's worth finding out where you stand.
